Sirniki

Sirniki are a type of fried quark pancakes, garnished with sour cream, jam, honey, or apple sauce. In Ukraine, they are called syrnyky. The cheese mixture may contain raisins for extra flavour.
Ingredients:
- Cottage cheese (preferably farmeres cheese or ricotta) 500g
- Eggs 2
- Sugar 60g
- Flour 1/2 cup
- Vanila extract 1 teaspoon
- Oil 1 teaspoon
Instructions
- Prepare the Mixture: In a large bowl, combine the cottage cheese, eggs, sugar, vanilla extract (if using) and butter. Mix well until smooth.
- Add Flour: Gradually add the flour to the mixture, stirring until it forms a dough-like consistency. The mixture should be soft but not too sticky. If it’s too sticky, add a little more flour.
- Shape the Syrniki: Dust your hands with flour and form small balls (about the size of a golf ball) from the mixture. Flatten each ball slightly to form a thick pancake shape.
- Heat the Pan: Heat a non-stick skillet over medium heat and add a little oil or butter for frying.
- Fry the Syrniki: Place the syrniki in the skillet and fry for about 3-4 minutes on each side, or until golden brown and cooked through.
- Serve the syrniki warm with sour cream, jam, honey, or fresh berries.
